WHISKY

Whisky is an English word deriving from usky, an abbreviation of usquebaugh: the Gaelic word for "water of life". Why? Perhaps because distillates were first deemed medicines, a judgement that persists amouny many. Whisky is a grain distillate, almost always including a proportion of barley malt. It retains some taste from the water and grains that were its original raw materials: peat used to dry the malt, the casks in which it w as matured, and from the surroundings in which they slept. No where is this more evident than in Scotland, which has far more whisky distilleries than any other nation in such a diversity of locations. Each distillery produces a spirit with flavors which are shaped by the landscape. While blended scotches combine the flavors of Lowland and Highland, river and coast, the single malts each represent their own mountain, glen or cove. Speyside
The Speyside region of the Scottish Highlands now is home to the largest concentration of whisky distilleries. The principal reason is due historically to the suitability for illicit operation, the quality of water, plentiful peat for the kilns and fertile valleys yielding good supplies of barley. Later as the railway era connected this region to Glasgow and Edinburgh, it ensured survival of the distilleries at a time when more remote operations failed. The Regions, located in the Northeast corner of Scotland is framed by the Grapian Mountains and the sea and is comprised of a series of river valleys. The river names, which include, The Spey, Deveron, Isla, Fiddich, Dullan, Livet and Lossie are now synonymous with light, sweet, malty whiskies of complex character and inpeccable quality. Variations between the whiskies of each distillary can be infinite after ageing and maturation, ranging from sweet nectar to heavily sherried temptations. Exploration is in order.

Islay

Islay, pronounced (I-la), is a remote island off the west coast of Scotland, only 17 miles from the shores of Ireland, where whisk(e)y is thought to have first been distilled. There are 8 working distilleries on the island producing malts that are the weightiest and most pungent. Smoky, medicial flavor is imparted from the peat fuel used in drying the barley and the water which has flowed over the peat bogs made from ancient heather and seaweed.

Lowlands
The Lowland region is the vast area south of an imaginary line between Greenock and Dundee. It's distilleries produce the most accessible whiskies, light in both flavor and body. Lemongrass to flowery notes on the palate. Historically often triple distilled. Sadly, only four working distilleries can be found today.

Japan
Shinjiro Torii, the founder of Suntory and the father of Japanese whisky, had a fascination with Scotland and its whisky. He built Japan's first distillery in 1923 near the ancient capital of Kyoto, with its pure water, cool temperatures and high humidity providing and ideal environment for maturation. Japanese whisky is highly regarded by connoisseurs the world over.

By 1800 Ireland had more than 2000 distilleries playing a much more important role than Scotch. The collapse resulted from multiple factors: the arrival of blended whisky from column stills producing cheaper and milder grain distilleries, the Irish civil war (1916-1921) and lastly US prohibition. By 1966 only 2 distilleries remained. Irish Whiskey is usually a combination of whiskey from column stills (producing grain spirit from corn) and pot stills producing malt or "pure pot still whiskey" (made from both malted and unmalted barley). All Irish Whiskeys are now produced in only 3 distilleries yielding mostly light, triple distilled, nonpeated spirit. The exception is Cooley distillery which makes some peated double distilled whiskey.

Single Grain
A distillate produced from corn and often other grains in column stills. It is used primarily to mix with different single malts to create blended whisky. A "single grain whisky" is one that comes from a single distillery and are rarely found bottled.
